The 12 Donuts of Christmas, Day 1: Snow Flurry Cake Donuts

I'm kicking off this holiday donut project with Snow Flurry Cake Donuts because the first snow is hitting us in Seattle right now. My kids have been longing to make snow-Olafs all week and I've been longing to break into Christmas-themed baking.



These little Snow Flurry Donuts are so adorable. They consist of a simple spiced cake donut (exhaauustive instructions in my last post) topped with a clean white icing and sprinkled with coconut. They're definitely a great way to put you in holiday mode!


INGREDIENTS

Spiced Cake Donuts (makes 18 donuts)
2 1/2 cups all-purpose flour
1/4 cup cornstarch
1 tsp baking powder
1 tsp ground nutmeg
1/2  tsp fine sea salt
1/2 cup unsalted butter, softened
3/4 cup sugar
2 large eggs
1 tsp vanilla extract
1/2 cup whole milk

peanut oil for frying

White Icing with Coconut Topping
4 cups powdered sugar
2 tsp light corn syrup
1 tsp vanilla extract
pinch of fine sea salt
1/4 to 1/3 cup whole milk
1 cup sweetened flaked coconut


DIRECTIONS

  1. In a large bowl, combine flour, cornstarch, baking powder, nutmeg and salt. Whisk to combine and aerate. 
  2. In a separate large bowl, cream sugar and butter. Stir in eggs and vanilla.
  3. Fold in dry ingredients and milk until just combined. Scrape dough directly into plastic wrap and chill for at least 30 minutes.
  4. Fill a heavy-bottomed pot 2” deep with peanut oil and heat to 360° F. Carefully lower each donut into oil then fry both sides for 2 minutes. Transfer to a wire rack to cool.
  5. While donuts are cooling, prepare white icing by combining powdered sugar, corn syrup, vanilla, sea salt and whole milk in a large bowl. Beat until smooth.
  6. Dip donut tops in white icing and immediately sprinkle with coconut.
